How to Make Quick and Easy Pan Fried Corn Fritters

Ingredients:

  • 3 cups of corn (from 2 cans of sweet whole kernel corn)

  • 1 jalapeño, diced (remove seeds and membrane)
  • 1 tablespoon fresh lime juice
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon chili powder
  • 2 large eggs, lightly beaten
  • 1/4 cup whole milk
  • 2 cups Monterey Jack cheese, shredded
  • 4 tablespoons olive oil

Directions:

  1. In a big bowl, mix the corn, cilantro, green onion, jalapeño, and lime juice.
  2. In another small bowl, mix the flour, baking powder, salt, black pepper, and chili powder.
  3. Add the dry mix to the corn mix and stir everything together.
  4. Add the eggs, milk, and shredded cheese. Mix well.
  5. Heat the olive oil in a pan over medium heat.
