How to Make Mini Meatloaf Muffins
Ingredients:
- 1 ½ lbs ground beef
- ½ cup chopped onion
- ½ cup chopped bell pepper
- 2 teaspoons Worcestershire sauce
- 2 tablespoons chopped fresh parsley
- 1 teaspoon Dijon mustard
- ¼ cup BBQ sauce
- ⅔ cup bread crumbs
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 1 large egg
- Salt and pepper to taste
For the glaze:
- ¼ cup BBQ sauce
- ¼ cup ketchup
- 1 tablespoon honey
Directions:
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the ground beef, onion, bell pepper, Worcestershire sauce, parsley, Dijon mustard, BBQ sauce, bread crumbs, Italian seasoning, garlic powder, egg, salt, and pepper. Mix well with your hands or a spoon.
- Lightly grease a muffin tin. Fill 10 muffin cups with the meat mixture, pressing it down gently.
- In a small bowl, mix the BBQ sauce, ketchup, and honey to make the glaze.
- Spoon some glaze on top of each meatloaf muffin.
- Bake for 25 minutes, or until cooked through and the tops are a little brown.
