How to Make French Silk Slab Pie
Ingredients:
- 2 (9-inch) pie crusts, softened
For the filling:
- 10 oz bittersweet chocolate (plus more for topping)
- 4 eggs
- 1 1/3 cups granulated sugar
- 2 teaspoons vanilla extract
- 1/2 cup (1 stick) unsalted butter, softened
- 2 1/2 cups heavy whipping cream
- 1/3 cup powdered sugar
Directions:
- Preheat oven to 350°F. Spray a half sheet pan with non-stick spray.
- Roll out the two pie crusts into a rectangle a bit larger than the pan. Press into the pan, trim edges, and crimp if you like.
- Line the crust with parchment paper. Add pie weights or dried beans. Bake for 15–17 minutes or until lightly golden. Let cool completely.
- Melt the chocolate in the microwave in 30-second steps, stirring each time. Stir until smooth. Set aside to cool slightly.
- In a saucepan, whisk the eggs and sugar. Cook on low heat, stirring all the time, until the sugar is melted and the mixture is slightly thick (about 5 minutes).
