How to Make French Onion Soup
Ingredients:

- 1 bay leaf
- 1/4 teaspoon dried thyme

- 1 baguette, sliced
- 2 cups shredded Gruyère or Swiss cheese
Directions:
- In a large pot, melt the butter with the olive oil over medium heat.
- Add the sliced onions and cook for about 15 minutes, stirring often.
- Sprinkle in the sugar and continue cooking the onions until they are golden brown and caramelized (about 30 minutes).
- Add the garlic and cook for 1 more minute.
- Pour in the beef broth and wine (if using).
- Add the bay leaf, thyme, salt, and pepper.
- Bring to a boil, then lower the heat and simmer for 20–30 minutes.
- While the soup simmers, toast the baguette slices in the oven until crisp.
- Remove the bay leaf from the soup.
- Ladle the soup into oven-safe bowls. Place a slice or two of toasted bread on top and sprinkle with cheese.
