How to Make Cheesy Chicken Fritters

Ingredients:

  • 1 1/2 lbs chicken breasts (about 3 large)
  • 2 large eggs
  • 1/3 cup mayonnaise

  • 4 oz mozzarella cheese (about 1 1/3 cups shredded)
  • 1 1/2 tablespoons chopped fresh dill
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons light olive oil (or other cooking oil)

Optional Garlic Aioli Dip:

  • 1/3 cup mayonnaise
  • 1 garlic clove, pressed or finely chopped
  • 1/2 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Directions:

  1. Cut the chicken into small pieces, about 1/3-inch thick. Place them in a large bowl. (Tip: slightly freezing the chicken can make it easier to cut.)
  2. Add the eggs, mayonnaise, flour, shredded cheese, dill, salt, and pepper to the bowl. Mix everything well until it’s evenly combined.
  3. Cover the bowl and refrigerate the mixture for at least 2 hours or overnight for best results.
  4. Heat a large non-stick pan over medium heat. Add a bit of oil.
  5. Scoop a heaping tablespoon of the chicken mix into the pan for each fritter. Flatten them slightly with the spoon.
  6. Cook for 3–4 minutes on one side, then flip and cook for another 3 minutes, or until golden and cooked through.
  7. Keep going with the rest of the mix, adding more oil if needed.
  8. If you’re making the aioli, just mix the mayo, garlic, lemon juice, salt, and pepper in a small bowl until smooth.
