How to Make Better Than Takeout Fried Rice

Ingredients:

  • 4 cups cooked rice (preferably cold and day-old)
  • 2 tablespoons sesame oil
  • 1 small white onion, chopped
  • 1 cup frozen peas and carrots, thawed
  • 2–3 tablespoons soy sauce (more or less to taste)
  • 2 eggs, lightly beaten
  • 2 tablespoons chopped green onions (optional)

Directions:

  1. Heat the sesame oil in a large skillet or wok over medium heat.
  2. Add the onion, peas, and carrots. Stir and cook until tender.
  3. Slide the vegetables to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.
  4. Mix the eggs and vegetables together.
  5. Add the cooked rice to the pan. Stir everything together well.
  6. Pour the soy sauce over the rice and stir again until everything is well coated and heated through.
