How to Make Instant Pot Pot Roast

Ingredients:

  • 3 to 4 lb chuck roast
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 carrots, cut into chunks
  • 4 potatoes, cut into chunks

Directions:

  1. Turn on your Instant Pot and set it to “Sauté.” Add the olive oil.
  2. Put the chuck roast in the pot and brown each side for about 3–4 minutes. Take it out and set it aside.
  3. Add the onion and garlic to the pot. Cook until they soften.
  4. Stir in the beef broth, tomato paste, and Worcestershire sauce. Add salt, pepper, thyme, and rosemary. Mix well.
  5. Put the roast back into the pot. Add the carrots and potatoes around it.
  6. Close the lid. Set the Instant Pot to “Manual” or “Pressure Cook” for 60 minutes.
  7. When done, let the pressure release naturally for 10–15 minutes, then open the lid.
  8. Serve hot with the vegetables and some of the cooking liquid poured over the top.
