How to Make Italian Cream Cheese Cake

Ingredients:

  • 1/2 cup butter (softened)
  • 1/2 cup shortening
  • 2 cups sugar
  • 5 eggs (room temperature)
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans
  • 1 package (8 oz) cream cheese (softened)
  • 1/2 cup butter (softened – for frosting)
  • 1 tsp vanilla extract (for frosting)
  • 1 package (16 oz) powdered sugar (for frosting)
  • 1 to 2 tbsp milk (for frosting)
  • Extra chopped pecans for topping (optional)

Directions:

  1. Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. In a big bowl, beat 1/2 cup butter, shortening, and sugar until fluffy. Add eggs one at a time, beating after each.
  3. In another bowl, mix flour and baking soda. Add this to the butter mix little by little, switching with buttermilk. Stir in 1 tsp vanilla, coconut, and pecans.
