How to Make Broccoli Cheddar Stuffed Potatoes

Ingredients:

  • 4 large russet potatoes
  • 1 ½ cups chopped broccoli (fresh or frozen)
  • 1 cup shredded cheddar cheese
  • ¼ cup sour cream
  • 2 tablespoons butter
  • Salt and pepper to taste

Directions:

  1. Preheat oven to 400°F (200°C).
  2. Wash the potatoes and poke holes in them using a fork.
  3. Bake the potatoes directly on the oven rack for about 45–50 minutes, or until soft.
  4. While the potatoes bake, steam or boil the broccoli until tender.
  5. Once the potatoes are done, let them cool for a few minutes. Then cut them in half lengthwise and scoop out the inside into a bowl.
  6. Add the butter, sour cream, salt, and pepper to the scooped-out potato. Mash it all together.
  7. Mix in the cooked broccoli and half of the shredded cheese.
  8. Spoon the mixture back into the potato skins.
  9. Sprinkle the remaining cheese on top.
  10. Place them back in the oven for about 10 minutes, or until the cheese is melted and bubbly.
  11. Serve warm and enjoy!
