How to Make Loaded Baked Potato and Chicken Casserole

Ingredients:

  • 1 lb boneless chicken breasts (cut into small pieces)
  • 6–8 medium potatoes (cut into cubes)
  • 1/3 cup olive oil
  • 1 ½ tsp salt
  • 1 tsp black pepper
  • 1 tbsp paprika
  • 2 tbsp garlic powder
  • 2 cups shredded cheese (cheddar or your choice)
  • 1 cup crumbled cooked bacon
  • ½ cup green onions (chopped)

Directions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix the olive oil, salt, pepper, paprika, and garlic powder.
  3. Add the cubed potatoes and chicken to the bowl and mix well to coat everything.
  4. Pour the mixture into a greased 9×13 baking dish.
  5. Bake uncovered for 55–60 minutes, stirring every 20 minutes, until chicken is cooked and potatoes are crispy.
