How to Make One Pot Mexican Rice Casserole
Ingredients:
- 1 lb ground beef
- 1 small onion, diced
- 1 cup long grain white rice
- 1 tbsp taco seasoning
- 1/2 tsp cumin
- 1/2 tsp chili powder
- Salt and pepper, to taste
- 1 (15 oz) can corn, drained
- 1 (15 oz) can black beans, drained and rinsed
- 1 (8 oz) can tomato sauce
- 2 1/2 cups chicken broth
- 1 1/2 cups shredded cheese
- Fresh chopped cilantro, for garnish (optional)
Directions:
- In a large skillet over medium-high heat, cook the ground beef and diced onion until the beef is fully cooked. Drain the extra fat.
- Add the uncooked rice, taco seasoning, cumin, chili powder, salt, and pepper. Stir everything together.
- Add the corn, black beans, tomato sauce, and chicken broth. Mix well.
- Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer for 18–20 minutes or until the rice is tender.
- Once the rice is cooked, turn off the heat and sprinkle the shredded cheese on top. Cover again and let the cheese melt for a few minutes.
