How to Make Braised Short Ribs
Ingredients :
- 3 pounds bone-in beef short ribs
- Salt and pepper, to taste
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 carrots, chopped
- 2 celery stalks, chopped
- 2 tablespoons all-purpose flour
- 1 tablespoon tomato paste
- 1 cup red wine
- 2 cups beef broth
- 4 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 2 bay leaves
Directions :
- Preheat your oven to 350°F (175°C).
- Season the short ribs well with salt and pepper.
- In a large oven-safe pot, heat the oil over medium-high heat.
- Brown the ribs on all sides. Remove and set aside.
- In the same pot, add the onion, carrots, and celery. Cook until soft, about 5 minutes.
- Stir in the flour and tomato paste. Cook for 2 minutes.
- Add the wine and scrape the bottom of the pot to loosen any bits.
- Add the beef broth, thyme, rosemary, and bay leaves.
- Return the ribs to the pot. Cover and transfer to the oven.
- Bake for about 2.5 to 3 hours, until the meat is tender.
- Remove the herbs and serve the ribs with the sauce.
