How to Make Beef and Cheese Enchiladas

Ingredients:

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 (1.5 oz) package taco seasoning mix
  • 2 ½ cups shredded Cheddar cheese, divided
  • 1 (10 oz) can enchilada sauce
  • 1 (8 oz) can tomato sauce
  • 1 (16 oz) can refried beans
  • 10 (10 inch) flour tortillas

Directions:

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef and onion over medium heat until the beef is browned. Drain the grease.
  3. Stir in the taco seasoning mix and cook according to the package instructions.
  4. Mix in 1 cup of Cheddar cheese, tomato sauce, and refried beans. Stir well.
  5. In a separate bowl, combine enchilada sauce with 1 cup of water.
  6. Spread a little of the enchilada sauce in the bottom of a 9×13 inch baking dish.
  7. Spoon the beef mixture into each tortilla, roll it up, and place seam-side down in the dish.
  8. Pour the remaining enchilada sauce over the top and sprinkle with the rest of the cheese.
  9. Bake for 30 minutes, or until hot and bubbly.
