How to Make Pecan Cheesecake Squares
Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup packed brown sugar
- 1/2 cup butter, softened
- 2 (8 ounce) packages cream cheese, softened
- 1/2 cup white sugar
- 2 eggs
- 1/2 teaspoon vanilla extract
- 1 1/2 cups chopped pecans
- 2/3 cup packed brown sugar
- 1/4 cup heavy cream
- 2 tablespoons butter
Directions:
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour and 1/2 cup brown sugar. Cut in the 1/2 cup softened butter until crumbly. Press the mixture into a greased 9×13-inch baking pan.
- Bake crust in the preheated oven for 15 minutes.
- While crust bakes, beat cream cheese and white sugar in a bowl until smooth. Add eggs one at a time, then stir in vanilla.
- Pour the cream cheese mixture over the hot crust and spread evenly. Bake again for 15 minutes.
- While that bakes, in a small saucepan, combine pecans, 2/3 cup brown sugar, heavy cream, and 2 tablespoons butter. Cook and stir over medium heat until thickened, about 2 minutes.
- Spoon the pecan topping over the cheesecake layer and spread gently.
- Return the pan to the oven and bake for another 10 minutes.
- Let cool completely, then chill in the fridge before cutting into squares.
