How to Make Apple Fritter Cake

Ingredients:

For the Filling:

  • 1/3 cup light brown sugar
  • 1 teaspoon cinnamon
  • 2 medium apples (peeled and chopped)

For the Cake Batter:

  • 1/3 cup white sugar
  • 1/2 cup softened butter
  • 2 eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk

For the Glaze:

  • 1/2 cup powdered sugar
  • 1-3 teaspoons milk or cream (enough to make a pourable glaze)

Directions:

  1. Preheat the oven to 350°F (175°C). Grease and flour an 8×8-inch baking pan.
  2. Mix the filling ingredients (brown sugar, cinnamon, and chopped apples) in a small bowl. Set aside.
  3. In a large bowl, cream the butter and white sugar until smooth. Add the eggs and vanilla and mix well.
  4. In another bowl, combine the flour and baking powder. Slowly add it to the wet mixture. Then stir in the milk until smooth.
  5. Pour half of the batter into the prepared pan. Add half of the apple mixture on top. Pour the rest of the batter, then top with the remaining apples.
  6. Use a knife to swirl the apples into the batter slightly.
  7. Bake for 40–45 minutes or until a toothpick comes out clean.
  8. While the cake is still warm, mix powdered sugar with milk to make the glaze. Drizzle it over the top of the cake.
