How to Make Ranchero Steak with Potatoes
Ingredients:
- 1½ lb skirt steak
- 8 oz can tomato sauce
- 2–3 Serrano peppers
- 3 Roma tomatoes
- 2 bay leaves
- 1 small white onion
- 1 garlic clove
- 3 small potatoes
- Salt and pepper to taste
- 5 tablespoons olive oil
Directions:
- Heat 4 tablespoons of olive oil in a large pan over medium heat.
- Add the sliced potatoes. Cook until they are tender, then remove and set aside.
- In the same pan, add the minced garlic and stir for a few seconds.
- Add the thin slices of skirt steak. Cook until the steak releases its juices. Take the steak out and set it aside.
- Add 1 more tablespoon of olive oil to the pan.
- Add the sliced onions and Serrano peppers. Cook until the onions turn soft and clear.
