How to Make Okra Stew

Ingredients:

  • ⅓ cup olive oil
  • 1 large onion, chopped
  • 6 medium carrots, sliced
  • 2 pounds okra
  • 6 ounces tomato paste
  • 1 pound fresh spinach
  • 3 garlic cloves, chopped
  • 2 tablespoons vegetable bouillon paste
  • 1 teaspoon salt
  • 4 cups water
  • ¼ cup fresh parsley, chopped
  • 1 tablespoon allspice
  • ½ teaspoon black pepper
  • 1 tablespoon cayenne pepper​

Directions:

  1. Prepare the ingredients by chopping the parsley, onion, carrots, and garlic. Set them aside.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the chopped onions and sliced carrots to the skillet. Cook for about 5 minutes, stirring occasionally.
  4. Add the okra to the skillet. Stir and cook for approximately 25 minutes until the okra becomes tender. You can mash the okra slightly with a spoon to help it break down.
  5. Cover the skillet and continue cooking for another 10 minutes, stirring occasionally to prevent sticking.
