How to Make Strawberry Shortcake Cheesecake Bars
Ingredients:
For the crust:
- 1 pack of Golden Oreos (36 cookies)
- 1/2 cup butter, melted
For the cheesecake filling:
- 3 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
For the strawberry topping:
- 1 (3 oz) box strawberry gelatin
- 1 cup boiling water
- 1 cup cold water
- 1 lb fresh strawberries, chopped
For the crumble topping:
- 12 Golden Oreos, crushed
- 2 tablespoons butter, melted
- 1 tablespoon strawberry gelatin powder
Directions:
- Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with foil and spray it with cooking spray.
- Crush the Golden Oreos and mix them with the melted butter. Press the mix into the bottom of the baking dish. Bake for 10 minutes, then let it cool.
- In a bowl, beat the cream cheese and sugar until smooth. Add the eggs, one at a time. Mix in the vanilla.
- Pour the cream cheese mix over the crust. Bake for 30–35 minutes until set. Let it cool.
- In another bowl, mix the strawberry gelatin with boiling water. Stir well. Add cold water and chopped strawberries. Let it chill in the fridge for 10 minutes.
- Pour the strawberry mix over the cooled cheesecake layer. Let it set in the fridge for about 2 hours.
- For the crumble, crush the Oreos and mix with melted butter and strawberry gelatin powder. Sprinkle it on top of the bars.
