How to Make Lazy Day Oatmeal Cake
Ingredients:

- 1 1/4 cups boiling water
- 1 cup quick oats
- 1/2 cup butter (softened)
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 eggs
- 1 1/3 cups all-purpose flour
- 1/2 tsp salt
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
For the Topping:
- 1/2 cup butter (melted)
- 1/4 cup evaporated milk
- 1 cup brown sugar
- 1 cup shredded coconut
- 1 cup chopped pecans
Directions:
- First, pour boiling water over the quick oats in a bowl. Let it sit for about 20 minutes.
- In another large bowl, mix the softened butter, granulated sugar, and brown sugar. Add eggs and beat well.
- Add the soaked oats to the sugar mixture and stir to combine.
- In a separate bowl, mix flour, salt, baking soda, cinnamon, and nutmeg. Add this dry mix to the wet mixture and stir until smooth.
