How to Make Jambalaya
Ingredients:
- 2 tbsp olive oil
- 1 pound chicken breast, cut into chunks
- 1 pound andouille sausage, sliced
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes
- 1 cup long grain rice
- 3 cups chicken broth
- 2 tsp Creole seasoning
- 1/2 tsp thyme
- 1/2 tsp oregano
- Salt and pepper to taste
- 1 pound shrimp, peeled and deveined
- Fresh parsley for garnish (optional)
Directions:
- Heat the olive oil in a large pot over medium heat. Add the chicken and cook until browned. Remove and set aside.
- In the same pot, cook the sausage until browned. Add the onion, bell pepper, celery, and garlic. Cook until soft.
- Add the diced tomatoes, rice, chicken broth, Creole seasoning, thyme, oregano, salt, and pepper. Stir well.
- Add the chicken back to the pot. Bring everything to a boil, then reduce heat to low. Cover and simmer for about 25 minutes.
- Add the shrimp to the pot. Cover and cook for another 5-7 minutes, or until the shrimp are pink and cooked through.
