How to Make Pecan Cheesecake Squares

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 cup butter, softened
  • 2 (8 ounce) packages cream cheese, softened
  • 1/2 cup white sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups chopped pecans
  • 2/3 cup packed brown sugar
  • 1/4 cup heavy cream
  • 2 tablespoons butter

Directions:

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour and 1/2 cup brown sugar. Cut in the 1/2 cup softened butter until crumbly. Press the mixture into a greased 9×13-inch baking pan.
  3. Bake crust in the preheated oven for 15 minutes.
  4. While crust bakes, beat cream cheese and white sugar in a bowl until smooth. Add eggs one at a time, then stir in vanilla.
  5. Pour the cream cheese mixture over the hot crust and spread evenly. Bake again for 15 minutes.
  6. While that bakes, in a small saucepan, combine pecans, 2/3 cup brown sugar, heavy cream, and 2 tablespoons butter. Cook and stir over medium heat until thickened, about 2 minutes.
  7. Spoon the pecan topping over the cheesecake layer and spread gently.
  8. Return the pan to the oven and bake for another 10 minutes.
  9. Let cool completely, then chill in the fridge before cutting into squares.
