How to Make Lemon Meringue Pie

Ingredients:

  • 1 cup white sugar
  • 2 tablespoons all-purpose flour
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 1/2 cups water
  • 2 lemons, juiced and zested
  • 2 tablespoons butter
  • 4 egg yolks, beaten
  • 1 (9-inch) pie crust, baked
  • 4 egg whites
  • 6 tablespoons white sugar

Directions:

  1. Preheat oven to 350°F (175°C).
  2. In a medium saucepan, mix 1 cup sugar, flour, cornstarch, and salt. Stir in water, lemon juice, and lemon zest. Cook over medium heat, stirring often, until it boils. Let it boil for 1 minute.
  3. Remove from heat and stir in butter.
  4. In a small bowl, beat egg yolks. Slowly whisk in a small amount of the hot mixture to temper the eggs. Then, whisk the egg yolks into the saucepan.
  5. Bring mixture back to a boil and keep stirring until thick. Pour into the baked pie crust.
  6. In a large glass or metal bowl, whip egg whites until foamy. Slowly add 6 tablespoons sugar and continue to whip until stiff peaks form.
  7. Spread the meringue over the pie, sealing the edges at the crust to prevent shrinking.
  8. Bake for 10 minutes, or until the meringue is golden brown.
