How to Make Cowboy Trifle
Ingredients:
- 1 box cornbread mix, prepared as the package says
- 2 medium jalapeños, seeded and minced
- ½ medium yellow onion
- 1 bell pepper, chopped
- 1 pound thick sliced bacon, cooked and chopped
- 1 ½ cups mayonnaise
- 1 cup ranch dressing
- 1 (28 oz) can diced tomatoes, drained
- 2 (16 oz) cans beans (pinto, kidney, or black), drained and rinsed
- 2 (16 oz) cans sweet corn, drained and rinsed
- 2 cups shredded cheddar cheese
- 1 bunch green onions, thinly sliced
- Salt and pepper to taste
Directions:
- Cut the cooked cornbread into 1-inch chunks. Set it aside.
- In a bowl, mix the diced tomatoes, onion, bell pepper, jalapeños, beans, and corn.
- In another bowl, mix the mayonnaise and ranch dressing. Add salt and pepper.
- In a big serving bowl, place half of the cornbread chunks at the bottom.
- Add a layer of the veggie and bean mixture over the cornbread.
- Sprinkle some shredded cheddar cheese over the top.
