How to Make Cowboy Meatloaf and Potato Casserole

Ingredients:

  • 1 lb. lean ground beef
  • 1 cup fresh bread crumbs
  • 1/4 cup chopped onion
  • 1 egg
  • 1/2 teaspoon salt
  • 3/4 cup barbecue sauce, divided
  • 3 cups prepared mashed potatoes
  • 1 (2.8 oz) can French Fried Onions
  • 1 cup shredded Cheddar cheese

Directions:

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix the ground beef, bread crumbs, chopped onion, egg, salt, and 1/2 cup of barbecue sauce.
  3. Press the beef mixture into the bottom of an 8-inch square baking dish.
  4. Bake uncovered for 20 to 25 minutes.
  5. Remove from oven and spread the mashed potatoes on top of the meat.
  6. Drizzle with the remaining barbecue sauce.
  7. Sprinkle with cheese and half of the French Fried Onions.
