  • 4 maraschino cherries
  • 1/3 cup shortening
  • 1/2 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk

Directions:

  1. Preheat the oven to 350°F (175°C).
  2. Melt the butter in a 9-inch round baking pan. Sprinkle the brown sugar evenly over the melted butter.
  3. Arrange the pineapple slices on top of the brown sugar. Place one cherry in the center of each pineapple slice.

  5. In another bowl, mix the flour, baking powder, and salt. Add this dry mix to the creamed mixture a little at a time, alternating with the milk.
  6. Pour the batter over the pineapple and cherries in the pan. Spread it evenly.
  7. Bake for 35 to 40 minutes or until a toothpick comes out clean from the center.
  8. Let the cake cool for 5 minutes. Place a plate on top of the pan and flip it over carefully. Let it sit for a minute, then remove the pan.
  9. Serve warm or let it cool completely.
